Instructions
Preparation:
Peel and cutpotatoes in 1 inch cubes, rinse in cold water.
Peel and thinly slice onions. Next chop parsley and set aside.
Cook the Potatoes:
Place potato cubes in a pot, cover with cold water, and add salt.
Bring to a boil, reduce heat, and simmer for 15-20 minutes until soft and nearly falling apart. Drain and return to the pot.
Caramelize the Onions:
Meanwhile heat 2 tbsp olive oil in a skillet over medium heat.
Add sliced onions and a pinch of salt.
Cook for 20-25 minutes, stirring occasionally, until soft and golden.Add a splash of water or more oil if onions stick to the pan.
Mash the Potatoes:
Mash cooked potatoes until smooth and creamy. For ultra-smooth texture, press through a sieve (optional).
Combine Onions and Potatoes:
Add vegan butter and non-dairy milk to the potatoes.
Season with salt and pepper. Fold in caramelized onions evenly, adding more milk if needed. Avoid overmixing.
Garnish with chopped parsley or chives.Serve hot and enjoy!
Notes
Cook onions over low to medium heat to avoid burning and to allow natural sugars to develop.
If onions start to stick, add a splash of water, vegetable broth, or more oil to deglaze the pan.
Use starchy potatoes like Russets or Yukon Golds for a fluffy texture.
Mash potatoes while they are still warm for a smoother texture.
Mix the caramelized onions into the mashed potatoes while they are still warm to enhance the overall flavor.
